Cranberry Peach Muffins
Ingredients
  • 4cups watercool (approx. 72°F)
  • 1 box Gold Medal™ Whole Grain Variety Muffin Mix5 lb
  • 2tsp nutmegground
  • 4cups Peachescanned, drained, chopped
  • 2cups cranberriesdried
  • 1/2cup sugarcoarse
Instructions
  1. Combine water, muffin mix and nutmeg in mixing bowl with whisk or rubber spatula.
  2. Fold in peaches and cranberries; stir until batter is smooth. Note: Batter will be thick.
  3. Deposit using #16 scoop into greased or paper-lined standard muffin pans.
  4. Sprinkle coarse sugar evenly over each muffin.
BAKE
  1. Convection Oven* 350°F 19-24 minutes / Standard Oven 400°F 24-29 minutes
  2. Rotate pan when baked in convection oven one-half turn (180°) after 10 minutes of baking.
