Gingered-Lime Chicken with Rice Soup
Ingredients
Prepare the Soup
  • 1each Onionyellow, diced medium
  • 3each Garlic clovechopped
  • 3lbs Chicken thighsboneless, skinless, 3/4″ dice
  • olive oilas needed
  • 2each Gingerminced
  • 1gallon KnorrĀ® Liquid Concentrated Base Chicken
  • 1.25cups White riceuncooked
To Serve
  • Cilantrochopped
  • limezested and juiced 1 each
Instructions
Prepare the Soup
  1. Sweat ginger, onion, and garlic in small amount of oil.
  2. Add chicken meat and prepared KnorrĀ® Professional Liquid Concentrated Chicken Flavor Base.
  3. Add rice and bring to a simmer, covered, for 30 minutes or until rice is cooked and chicken is tender.
To Serve
  1. Garnish with cilantro, lime juice and zest.
