Grilled Shrimp And Guacamole Tostada Bites
Ingredients
  • 6each Miniature corn tostadas2″ dia.
  • 1each Bamboo skewer
  • 3tbsp guacamolefresh
  • 6each Shrimp 31/35tail removed, skewered
  • 1oz Sweet Baby Ray’s Citrus Chipotle Barbecue Sauce
  • 1tbsp Ken’s Jalapeño Ranch Dressing
  • 6each Cilantro leaves
  • 1tsp Chopped cilantro
Instructions
  1. Fry mini tostadas in 365 F deep fryer until done, drain and sprinkle with salt.
  2. Place shrimp on bamboo skewer and grill on each side until 150F brush with Sweet Baby Ray’s Citrus Chipotle Barbecue sauce on both sides.
  3. Place mini tostadas on warm serving plate and top with 1.5 teaspoons of guacamole on each, then place a barbecue-glazed shrimp on top of guacamole.
  4. Drizzle tostadas with Ken’s Jalapeño Ranch dressing, garnish with a cilantro leaf on top of each and sprinkle plate with chopped cilantro.
