Lobster and Seafood Frittata
Ingredients
  • 1pound King & Prince Seafood Lobster Sensations®
  • 3tablespoons olive oil
  • 1each Red Onionjulienned
  • 2cloves garlicchopped
  • 3each yellow squash
  • 1each yellow bell pepperjulienned
  • 1each red bell pepperjulienned
  • 6each eggs
  • 1/4cup heavy cream
  • 3tablespoons fresh basil
  • 10ounces Boursin Cheese
  • 2cups Gruyere cheeseshredded
Instructions
  1. Boil water with a dash of salt and quinoa. Place lid on top and reduce the heat to simmer for approximately 15 minutes until the quinoa is tender. Fluff quinoa with a fork and let cool.
  2. Mix the Jumbo Crab Sensations®, quinoa, mango, avocado, jalapeno peppers, and scallions in a large bowl. Season with salt and pepper.
  3. Combine vinaigrette with quinoa bowl.
