Chick’n Burrito Bowl with Cauliflower Rice

Ingredients
  • 9oz Gardein Meatless Chick’n Tenders
  • 10oz Riced cauliflowerprepared
  • 2Tbsp butter
  • 10oz Sweet corncooked
  • 1/2cup Onionchopped
  • 15oz can black beansdrained, rinsed
  • 2.5oz taco seasoning mix
  • 1/4 cup water
  • 2cups cherry tomatoeshalved
  • 2large Avocadospitted, peeled and diced
  • 1/4cup fresh cilantro leaves
  • 1medium limecut into wedges
Instructions
  1. Cook tenders according to package directions; once cooked thinly slice.
  2. Meanwhile, melt butter in large skillet and cook corn and onion, stirring occasionally, 5 minutes or until toasted. Stir in black beans, prepared cauliflower, taco seasoning and ¼ cup water. Cook, stirring frequently, 2 to 3 minutes or until seasoning is well combined.
  3. Meanwhile, melt Earth Balance in large skillet and cook corn and onion, stirring occasionally, 5 minutes or until toasted. Stir in black beans, prepared cauliflower, taco seasoning and ¼ cup water. Cook, stirring frequently, 2 to 3 minutes or until seasoning is well combined.
  4. Evenly top with tomatoes, avocado and tenders. Garnish with cilantro and lime wedges.
