Parmesan Tomato Crab and Seafood Salad
  • 6ounces King & Prince Seafood Jumbo Crab Sensations┬«
  • 1ounce roasted red peppersdiced
  • 1/2ounce bermuda oniondiced
  • 1ounce Tomatodiced and seeded
  • 2each Italian Parsleychopped
  • 1each fresh basil chiffonade
  • 1each Garlic cloveminced
  • 1/8cup olive oil
  • kosher saltto taste
  • Fresh ground pepperto taste
  • 1each heirloom tomatothick sliced
  • 1/4cup all-purpose flourseasoned with salt & pepper
  • 1/4cup panko
  • 2each eggs
  • 2tablespoons Dijon mustard
  • 1/8cup Parmesan cheesegrated
  • 2 sprigs fresh basil
  • kosher saltto taste
  • Fresh ground pepperto taste
  1. First, prepare the Italian Jumbo Lump Crab Sensation Salad.
  2. Add the first 10 ingredients in a bowl and let chill for 8 hours.
  3. Next, prepare the Parmesan Crusted Tomato.
  4. Season flour with salt and pepper.
  5. Season panko with Parmesan cheese, fresh basil, salt and pepper.
  6. Whisk the eggs with Dijon mustard.
  7. Bread the tomatoes, first dip in flour, then egg and panko.
  8. Fry until golden brown.
  9. Top the crispy tomato with the crab salad and drizzle with balsamic glaze.
