Prepare Fire Roasted Gravy
  • 0.25cups Poblano pepperroasted, diced
  • 0.25cups Caramelized onionsprepared, diced
  • salt and pepperto taste
  • 0.5qt Knorr® Professional Brown Gravy 6.83 ouncesprepared
Prepare Smashed Potatoes
  • 3lbs Yukon Gold potatoesquartered
  • 1.25cups half and halfwarmed
  • 0.38lb buttermelted
  • salt and pepperto taste
Finish the Dish
  • 1.88lbs Yukon Gold smashed potatoesprepared
  • 2.5cups Fire-roasted gravyprepared
  • 5oz Spanish chorizodiced
  • 2.5oz Queso frescocrumbled
  • Cilantrochopped
Instructions
Prepare Fire Roasted Gravy
  1. Combine prepared Knorr® Brown Gravy with remaining ingredients and season to taste with salt and pepper.
  2. Simmer 5 minutes and reserve warm.
Prepare Smashed Potatoes
  1. Boil potatoes in water until tender; drain.
  2. Combine cooked potatoes with remaining ingredients and mash by handuntil mostly smooth.
Finish the Dish
  1. Top (6 oz.) Yukon Gold smashed potatoes with (3½ oz. ladle) fire-roasted gravy, (1 oz.) diced chorizo and (½ oz.) queso fresco.
  2. Garnish with cilantro.
