Sweet Potato Breakfast Pizza
Ingredients
  • 3ounces McCain® Harvest Splendor® Sweet Potato
  • Chopped 1″ Wedges
  • 1 each pizza dough8″ prepared (or make your own)
  • 1tablespoon extra-virgin olive oil
  • 1 large egg
  • 8slices baconcooked and chopped
  • 4ounces Gouda cheesegrated
  • Chiveschopped to garnish
Instructions
  1. While sweet potatoes are frying, spread pizza dough on a greased baking sheet or heated pizza stone. Brush olive
  2. oil over the base and on the crust of the dough.
  3. Add grated Gouda, cooked sweet potatoes and bacon evenly.
  4. Crack egg in the center and cook on high heat until browned.
  5. Garnish with chopped chives.
  6. Serve on pizza stone or a cutting board.
