Tuscan Trattoria Soup
Ingredients
  • 1 Tbsp Olive oil
  • 0.50cup Onionfinely chopped
  • 0.50tsp Thymewhole, dried
  • 3each Garlic cloveminced
  • 1cup carrotsdiced
  • 1can White beans15 oz. cans
  • 1can Kidney beanscrushed, 15 oz. cans
  • 2can Knorr® Ultimate Chickenprepared
  • 1cup Zucchinidiced
  • 0.50cup Small pastauncooked, ditilini
  • 0.25cup Parsleyflat-leaf, fresh, chopped
  • 0.50tsp Lemon rindgrated
  • 0.25tsp salt
  • 0.25tsp Red peppercrushed
  • 0.25tsp Escarole or spinachfresh
  • 5Tbsp Parmesan cheesegrated (optional)
Instructions
  1. Heat oil in pan over medium heat. Add onion, thyme, garlic and carrots. Sauté for 5 minutes.
  2. Add beans and Knorr® Ultimate Chicken. Bring to a boil. Cover, reduce heat and simmer for 15 minutes.
  3. Add remaining ingredients except for escarole or spinach. Cook for 15 minutes or until the pasta is done.
  4. Add escarole or spinach. Sprinkle with cheese if desired.
