• 8 oz Elbow macaroni
• 6 Tbsp Unsalted butter, plus more for the baking dish
• 8 oz Cremini mushrooms, thickly sliced
• Kosher salt
• Freshly ground black pepper
• 1 bunch Scallions, white and light, green parts, chopped (about 1 cup)
• 2 tsp Chopped fresh thyme
• 1 clove Garlic, finely chopped
• 5 Tbsp All-purpose flour
• 2 Tbsp Dry white wine
• 3 cups Low-sodium chicken broth
• 1 cup Half and half
• Generous pinch freshly grated nutmeg
• 3 cups Chopped boneless skinless rotisserie chicken meat (or other leftover cooked chicken or turkey)
• 1 1/2 cups frozen peas and carrots, thawed
• 1/4 cup Chopped fresh Italian parsley
• 4 oz Cream cheese, cut into chunks and softened
• 1/4 cup Fine dry breadcrumbs
