Mexican Street Corn Soup

Mexican Street Corn (Elote) menu items are up 7.9% over last year and elote sides are up 41.4% over the last two years. In fact 55% of consumers are likely to order dishes with ethnic flavors for dinner (Technomic 2018 Ethnic Consumer Trend Report). This vegetarian and gluten item features sweet and roasted corn, cojita cheese and a traditional street corn spice blend with a hint of lime.

Mexican Street Corn Soup Handling 

Store FROZEN up to 21 months. DO NOT refreeze. DO NOT store in pouch after heating
Store THAWED (35-40°F) for up to 15 days

Heat to 165°F and hold for serving at 160°F, stir often. DO NOT dilute.

Chik’n Tenders Handling 

Shelf Life: Our thawed tenders hold up well in refrigerated storage as a ready to eat ingredient. For best quality of food, keep refrigerated for up to five days, however product integrity declines after 7 days.  Product is safe to consume up to 14 days refrigerated or 450 days frozen shelf life.

Cooking From Frozen

DEEP FRY 360°F for 4 minutes from frozen 
COMBI OVEN Bake frozen tenders for 10 minutes at 450°F / Air Speed 70%/ Convection Setting 
SPEED COOK OVEN Place frozen tenders on solid lined cooking basket – do not over-pack. Bake for 2 minutes at 475°F / Offset: 60 / Air Speed: 70
CONVEYOR OVEN Place frozen tenders on sheet pan with wire rack.  Bake for 6 minutes 30 seconds at 550°F
CONVECTION OVEN Bake for 8 minutes at 450°F

From Refrigeration: Thaw overnight in portioned bags, sealed containers or original packaging.

DEEP FRY Deep fry for 2 minutes 30 seconds at 360ºF. Rest for 2 minutes
COMBI OVEN Bake for 8 minutes at 450º F. Rest for 2 minutes.
SPEED COOK Place thawed tenders on solid lined cooking basket – do not over-pack. Bake for 2 minutes at 475ºF Offset: 60 | Air Speed: 70

Hold Time: 11 minutes under a heat lamp. For best quality, consume within 15-20 minutes after preparing.

Mini cheesecakes should be kept frozen and thawed in refrigerator for 1-2 hours before serving. To plate remove wrapper and pull cup edges away from cheesecake while frozen. Once thawed, refrigerate up to 4 days in original wrapper or covered in plastic wrap.
